Ham Ninh after the boats
Ham Ninh is a fishing village on the east coast, at the foot of the hills of the same name, facing the mainland across shallow water. Depending on the road you take it is somewhere between 14 and 20 km from Duong Dong. The village works early - the boats come in between about five and six in the morning - and by the afternoon it is a different place: quieter, the nets out to dry, the light low and warm over the water.
The village is best known for its blue swimmer crab: small, with a pinkish shell spotted with white, and firm, sweet meat. The way to eat it here is at a floating restaurant - a wooden dining room on stilts over the water, with live seafood kept in net pens beneath the floor. You choose what you want, it is weighed in front of you, and the kitchen cooks it while you watch the water go dark. The old wooden pier that used to be the village's photo spot has been closed because it was damaged, so we walk the lanes instead.
What you will probably eat
| Dish | How it is cooked | How it is eaten |
|---|---|---|
| Ham Ninh crab | Boiled, steamed with beer, or fried with tamarind | By hand, with salt, pepper and lime |
| Grilled sea urchin | In the half shell over charcoal with scallion oil | With a small spoon |
| Scallops or oysters | Grilled with scallion oil and crushed peanuts | Straight from the shell |
| Mantis shrimp or prawns | Fried with garlic, or grilled with salt and chilli | Peeled at the table |
| Cobia or a hotpot | Simmered sour soup, or a seafood hotpot for the table | With rice or noodles |
Not every dish is on every evening: it depends on what came in that morning. The guide agrees the order with you before anything is weighed, so there is no surprise on the bill and nothing is cooked that you did not want.

The evening, hour by hour
Day 1
Ham Ninh Crab Supper, 15:30 - 20:00
Cracking Ham Ninh crab over the water as the light goes
Pick-up from your hotel at about 15:30 and a drive across the island to the east coast. The guide walks you through the village lanes for about an hour: the boats pulled up for the day, nets drying, households sorting dried shrimp and squid. You can buy dried seafood here at village prices if you want to take some home.
At around 17:15 you arrive at the floating restaurant, look over the pens and agree the menu with the guide. Supper runs from about 17:45 for a good hour and a half, while the light goes over the water. You leave at about 19:15 and are back at your hotel by 20:00.

- Tips
Season and weather
The dry season, roughly November to April, is the easiest time: the sea on the east coast is calmer and the evenings clear. In the wet months, and above all in September, rain is heavy and some floating restaurants close on rough days. We check the day before and tell you if the evening needs to move.
Who should not book this
- Anyone allergic to shellfish.
- Vegetarians - this is a seafood supper.
- People hoping for a sunset over the sea: Ham Ninh faces east, so the sun sets behind the hills, not over the water. For a sea sunset, see Squid Night.
- Anyone who prefers not to see seafood chosen live from a pen.

Common questions
Questions travellers ask most
How much crab do we get?
The supper is built around crab plus four other dishes, enough for a full meal. If you want more crab, the guide orders it and you pay the restaurant's price.
Is this the same as the early-morning Ham Ninh trip?
No. Early-morning trips go for the boats coming in at dawn. This is the quiet afternoon village and an evening meal.
Can I avoid shellfish?
Partly - fish dishes can replace the crab and shellfish - but everything is cooked in one kitchen. With a serious allergy, choose another evening.
Do restaurants open every day?
Most days. On rough wet-season days some close; we check the day before.
